Soft Chewy Oatmeal Cookies

Soft Chewy Oatmeal Cookies

1 cup (2 sticks) softened butter

1/2 cup sugar

1 cup packed brown sugar

2 Tablespoons vanilla

2 eggs

1 1/2 cups flour (I prefer unbleached)

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon cinnamon

3 cups old-fashioned oats

1 1/2 cups raisins (presoaked in water & drained before adding in.)

Preheat oven to 350. (This is a stiff dough so I use my KitchenAid stand mixer)

  • Cream together butter and sugars. Add vanilla and eggs. Stir in flour, baking soda, salt, cinnamon, mix well. Mix in the oats until well combined. Stir in the raisins.

Drop dough onto an un-greased cookie sheet according to the size you want. Bake at 350 for 10-12 minutes. Bake till slightly golden. Let the cookies cool on the sheet for one minute then transfer to a cooling rack.
